That was epic

Was drinking some of brother in law’s home made cider tonight. Somewhat tart, made entirely from cooking apples. No one else liked it so I ended up having almost 2 Litres. May regret that tomorrow.

Any added rat?

Just about to get a leg of mutton given to me by a generous neighbour.

What the fuck do I do with it?

Freeze it whole?
Cut it up and freeze it?
Neither of the above?

and, for when we decide to eat it, I will also need some recipe ideas!

diced Mutton makes a fantastic biryani.

Stick it between two bits of bread, crack open a beer. Sorted.

Maybe a pickled onion on the side?

Smoke some of it, Paul, for medium term keeping, smoke and salt the rest for longer-term.

Don’t got a smoker. Anyway, I wouldn’t know the first thing about how to do that.

Tonight it is stewed beef and new potatoes with stilton gravy. Just sampled a bit and it’s epic.

Is there someone close by who smokes fish? They could do it for you easily enough for a small fee. Personally I would use the shank for a curry which you could freeze, and then bone out the upper leg to get 2 or 3 roasting pieces suitable for you and Lou. Bones = soup or happy doggos.

No fees for anything here. Everyone does everything they can to help each other. It’s the only way in such a small community.

Cheap lidded barbecue would do it for hot smoked; cold smoked is more demanding of space obvs - good suggestion to seek out an island smokehouse if there is one.

T’interweb has the knowledge you don’t, as you well enough know.

Grilled to crisp bacon, grilled cherry tomatoes, iceberg lettuce, tiger bread toasted on one side and thickly buttered the other. Decent juice and great coffee.
