I grew up watching the excellent coverage on C4 in the 80's. I get what you mean but I find that mix of different athletic specialisms, high technical skill, and strategy worth the stop-start nature of the game. Also much better to watch in the flesh, it makes more sense, and you can engage in the eat/ drink fest. The BBQ's and parties around the stadiums before the game are something else too.
Also the draft system means that it's very competitive and teams only get continued success based on their coaching and game management skills rather than their commercial ability in trying to buy the best players which is utterly ruining football.
