Chilli.

1kg lean steak mince 5% fat, 0.5kg 20% fat beef mince, red, yellow & green peppers, chopped onions & sliced chestnut mushrooms, chopped tomatoes + tomato puree & beef stock. Black beans 'n black eyed beans.

This should have some assertive heat to it as I used 6 ghost peppers + plenty of garlic. Four squares/40g of Ugandan single origin 85% cocoa solids dark chocolate stirred in fer some extra richness & a more velvety texture. Should get at least 7 portions.

Now in t’ oven for several hours at a gentle heat.

Moussaka is way better than lasagne but isn’t it meant to use lamb mince?

I’m really concerned about how shit the lasagnas are that you lot have been eating. Quite importantly, it doesn’t contain aubergine which automatically makes it a winner.

Lunch was.

Venison croquettes.

Celeriac fritters with lingonberries.

Smoked eel on a rosti.

Partridge.

Iron age pork schnitzel.

There were desserts too. Quite full now.
