4 hour pork belly, warm slaw, roasties and carrots. Served with an apple infused pork fat gravy…

Like A Bat Outa Hell…

A mix of meats for the loaf…Old Spot ground with a little belly…Italian fennel sausage…Rose Veal…Roast Garlic…Fresh bread torn into shreds and soaked in calvados and milk…Various fresh herbs…lemon zest.
Wrapped in smoked pancetta roasted then roast/braised in stock from the bones n white wine n calvados gravy.

Butter with a little potato mashed in…roast veg.
