Buttery mashed potato, cooked pasta of your choice (my Dad always used spaghetti so have I) three beaten eggs and good strong grated cheddar.

Coat an oven-proof dish with a thin smearing of butter then layer up the potato / pasta / cheese / drizzle some egg over that layer and same again only drizzle the remaining egg over the pasta and then smother it with more grated cheese bung it in a very hot oven for an hour and that’s it.

Actually maybe not as long as an hour but you’ll know when it’s ready when the top is browning and crisp.

Ages since I last did a roast dinner.

2kg boneless pork shoulder joint (end of day whoops bargain, only £3), crackling turned out excellent! Herby roasties done in beef dripping, sprouts, Bramley apple sauce & beer gravy mit sage ‘n onion stuffing.

Loads of pork ‘n crackling left over. I foresee a couple of days worth of choice sammidges on nice buttered rolls with roast pork, stuffing & apple sauce.
