Epic winter casserole, first part of cooking.

Did well again on me whoops bargain meat again. All in date until tomorrow 1050g lean diced beef + 255g rump steak & 280g dry cured oak smoked thick cut bacon grilled ‘n diced, under £11 fer the lot.

This is now in t’ oven slow ‘n low fer a couple of hours or so, prior to adding the final root veg medley fer the last 45mins.

Ingredients soo far, beef, bacon, leeks, red onion, pearl barley (essential for traditional British red meat winter casseroles ‘n stews IMV), tom purée, garlic & rich rosemary & onion beef stock + a full bottle of Theakstons Old Peculiar Yorkshire dark ale.

Towards the end a root veg medley of turnip, Chantenay carrots & swede will be added.

That’s the plan fer tomorrow Gareth. Have no suet in tonight, so will get some tomorrow & have with crusty buttered baguette tonight.

Have my son coming over on Saturday, as it’s me b’day weekend & have promised him a portion wiv herby beef suet dumplings :dumpling:

Finished casserole, now portioned up, with last night’s got 8 good hearty sized portions. Costed up it came in at fairly bang on £17 so precious little over £2 a portion. The meat alone would have been over £23 at none whoops bargain pricing.

Thickened quite beautifully with just the tom purée & pearl barley no other thickening agents used.

Beef suet mission accomplished, so gratuitous herby dumpling shot with tonight’s supper will be incoming.

I have no reservations in recommending Giggling Squid. It’s a franchise that works. It’s close but not quite authentic. But, it’s really good value, excellent quality, and reliably consistent.
