Was the lamb braised with the beans or did you roast it separately?
Out for lunch yesterday:
Starter was a “perfect egg” served with braid beans and savoury. So good I forgot to photograph before polishing it off. I had veal fillet that was so tender I could have eaten it with a spoon. The Wench had the onglet with pepper sauce.
My wife did it separately.
I have an order in for some Veal from a local farm shop.
T-bone, and about an inch thick.

Rose veal, I hope
It’s locally farmed. In communication we don’t use the term Rose while discussing veal.
To me it’s simply a label to make some people feel better.
All the baby boy cows around here are treated well before being slaughtered.
I don’t think white veal has been a thing in this country for years. Brexit Britain will be changing that, I imagine…
I did have an elderly client at one of the chalets ask if we could get some “proper white veal” when they saw I had Blanquette de Veau on the menu. Classy.
