Chilli time!

Made with DeArbol and Pequin chillies (and a naga). Toasted the garlic and chillies and added tin of chipotle en adobo.

Came out really nice.

Nein !

500g Pork Mince
500g Beef Mince
1 large onion (finely chopped)
2 large carrots (finely chopped)
1/2 cup of finely chopped celery
Handful of flat leaf parsley
sweet paprika
Smoked paprika
Pinch of dried chilli
Dried oregano
Streaky bacon.
1 hour at 170 fan in covered, bacon lined terrine, in bain-marie.
Cool overnight.
Remove from terrine. Place on oven tray and return to oven to colour bacon.

Mushrooms and veg. roasted with thyme, parsley, basil, juice of a lemon, and olive oil served on spaghetti squash. I don’t think spaghetti squash is much used in England, it’s an actual squash that shreds into pasta like strands after cooking . . .

Pork burger - made with sassermeat - green chilli, chilli flakes and chilli powder were among the ingredients.
