Bakewell - it’s all about the icing. And the jam

How’s the middle? Is it slightly underbaked?

OK once it cooled properly. I guess it might have done with 3-4 more minutes more I think I left in in for about 38. I’m aware that our oven can be a little hotter than it ought to be sometimes.

an interloper from Europe, Tarte De Santiago, a Spanish almond tart. Bit like a bakewell without the jam

My crust is a little low on the sides, dunno how that happened…

My frangipane has the consistency of napalm, not sure if it should have been thinner.

Baking now… 35 mins to go…

I may also have been a bit miserly with the jam.

4 tablespoons sounded a lot but it wasn’t once spread out. I trust you went Apricot?

I bottled it and conformed at the last minute… it just didn’t smell right with apricot.
