I saw this in a café yesterday (in Paris @amdismal
) . Using the bottom half of an Aeropress as a brewer. 16 grams of coffee, 250 grams of water, 1x filter.
To stop the (single) pour getting too turbulent, you pour into a desert spoon whilst rotating it and close to the surface as it rises. Just tried this for the first time, using the same grind I’d use for a pour over and it has made a really lovely light, clean brew.
That’s what my great uncle used to do when pouring the cream onto his Irish coffee!

Could probably do this spoon thing with a V60. I might try a single pour tomorrow and see what I get. Might mitigate not having a goose neck kettle too.

No, no agitation at all. They were trying that when I was there but thought that it made for too much body. The odd thing to me is that watched the guy make maybe 5 brews and the coffee was at the bottom, even on those he didn’t stir. When I tried it today, the coffee floated. I was using the same beans too, so pretty sure it wasn’t gas. Anyhow, it really works. I think the Aeropress is big enough to double the brew so will try that tomorrow.
If you want to pour with no agitation, get a Melodrip. It’s really effective - you can get quite clear/pale water above the coffee bed. Much more controllable than a spoon.
Of course it forces a recipe change. I normally do the first pour direct, to get the agitation, and the second with the Melodrip. The lack of agitation on the second pour stops the brew stalling.

This morning I have doubled the brew and just kept pouring as the level rose. I let it drop a couple of times but got pretty much four hundred grams of water in in one go. No difference in the cup, it’s light and clean. This method is an absolute doddle and makes a really good drink. It’s impressive.
Easy to forget a lot of this is just: good beans + good water.

I normally buy cheap (speciality) coffee for cold brew, but recently had nothing and it was a heat wave. Cue middling price (£15 I think) bag, and it’s the best cold brew I’ve made. Who knew?

I’ve been back and forth with single pour and five pours.
Currently do a bloom in the Blue Bottle then a single pour for the rest where I do a non-disruptive pour around the outside of the coffee, where it meets the filter paper, pouring fast. I tried it after reading Dom mentioning a crystal clear liquid and wanted to try to achieve it without any extra tools.
Been getting my best results like this.
Single pour as in not even bloom first?
No, lol
I don’t count the bloom as a real pour. I do the bloom in horizontal lines for some reason, for what it’s worth, after using WDT dry as I like to play with the coffee when the kettle boils.
