After yesterday’s purchase, the conversation went something like this:
Me - think I’ll need to buy a knife block or magnetic wall rack or something.
Ann - what about the one I bought you on your birthday about ten years back?
Me - really, did you - where’s that then?
Ann - in a box in the loft along with all the other stuff you’ve not used.
145mm blue steel utility knife made by Shimo Kamo. They didn’t quite have what I was looking for in kiritsuke and paring knives, but are expecting a delivery in the next few weeks, which should hopefully contain a kiritsuke that’s the right length. Apparently with artisanal Japanese makers you don’t send them an order, they send you an array of knives or something. Seems an odd way to do things but there we go.
Seems expensive for what you get tbh. Their 120mm utility is £160, and 60hrc. The one I just bought was 130€, longer, harder and hand made by a master craftsman.
Sweet! I might still go for their 8cm paring knife - the Japanese really don’t seem to like making super small knives, and 8cm is about as small as I’ve been able to find aside from bird’s beak style knives.
