One of these, the dishwasher played havoc with the varnish and split the wood.

Was great for the tough crust on sodabread

For my part I prefer the esthetic of the Damask finish on the RAN range over the Kurouchi hammered finish of the Zen’s also much easier to get a wicked edge on a dull slicer than a dull serrated bread knife

The 30cm is a cracking bread knife

For less wedge and you don’t need 30cm you cannot go wrong with an Opinel

Got one of these a couple of months ago. Nearly took the tip of my finger off with it on the second use so I can vouch for the sharpness.

Ooh, they do a 360mm option.

Yup, the serrated pastry knife is what I use and I’ve definitely cut myself on it a few times.

Description:

This Korean style cleaver has a funny looking shape, but a really practical use! It’s curved belly is great for rocking across herbs, and it’s high handle gives it leverage for slicing through larger ingredients.

The cutting edge is 115mm long for a total length of around 230mm making it a really handy tool for the kitchen! This cleaver can be used for slicing, dicing and chopping ingredients, including herbs.

The handle is a kind of ash and walnut, and has been waxed and oiled for water resistance. The metal has been oiled with camellia oil for rust protection.

Got this out today and it’s very nice, really comfortable in the hand. I’m extremely happy with it but I have only ever bought the cheapest crap before so it doesn’t mean much.

Would probably like another from him I think.

around 6 months ago - takes a few hours to do 3-4 knives but they end up razor sharp. Done quite a few friends’ knives too, altogether quite pleasing.
