Pizzas were an AA triumph at Lopwell, as far as I could see. There was conniption, disappointment, and efforts to pretend it was OK — all of which were more entertaining than any sporting event on TV or Prog.

We had the FoLs here last weekend so decided to get the Ooni out. I also tried making dough to Ooni’s own recipe which worked out fine. I think what we keep getting wrong at Lopwell is largely down to trying to work with refrigerated and still cold dough. The blobs need to be allowed time to get up to room temperature and then they’re quite easy to manipulate.
This one was the last, an odd request with prosciutto on one side and anchovies on the other.

If I do an overnight bulk ferment then I always make sure the dough is out the fridge for at least an hour before trying to manipulate it, otherwise it gets messy…
