Cooked this last night- simple but very tasty
A simple Jamaican chicken curry on the go.
First time I’ve cooked this and so far it tastes bloody wonderful.
Light lunch at a pub in Burford = fish finger sandwich

We just had homemade Indian spiced chicken and lentil soup. Made with the leftovers from yesterday’s roast and a stock made with the carcass from yesterday’s roast.
Saute onion, add garlic, black pepper, thyme and chopped scotch bonnet. Continue saute for a minute or 2.
Add 2 tblsp of Jamaican curry powder and a teaspoon of cumin powder, stir till fragrant.
Throw in diced chicken, stir occasionally till sealed.
Add chicken stock and a bit of tomato puree. Simmer till sauce has thickened and chicken tender.
Very simple and tasty.
I used breast as already had some, would probably use thigh next time.
Dinner with Strayans at the Lord Nelson (again).

Pie looks great, but by the looks of it they’ve boiled that broccoli until it surrendered, and then boiled it some more.
