yesterday - coronation chicken wraps
tonight - fennel sausages, butter bean mash thing, bottom of the fridge rat’
Mutton pepper fry (from the Dishoom book) and a dry curry of carrot and cabbage
The mutton was amazing
Tacos el pastor, cooked according to this recipe but marinade was cobbled together from various sources (made my own achiote paste with fresh orange and lime juice, added toasted avocado leaves and roasted the garlic) with a bit of my own experimenting (added a little veal glace and nduja, blended fresh pineapple in place of the juice).
Home made corn tortillas (which all puffed up this time!) and had the meat thinly sliced with diced red onion, coriander and the roasted pineapple.
Have some of the meat left over for lunch tomorrow
The recipe looks fantastic but what you’ve done to it sounds lush 
It did not disappoint and I have mild meat coma now.
I also used some very smokey smoked salt 
Grilled sweet potato and bean taco with grilled corn, onion, and jalapeño pico, cotija cheese, Greek yogurt, and green salsa. The shell is two flour tortillas stuffed with shredded cheese and warmed on the grille.
