Fish Friday:
Starter, North Sea prawns n Scotish scallops poached in fish stock with a green chilli n garlic mayo n avocado n Greek yogurt dressing.
Roasted sea bass, Za’atar, Ras El Hanout olive oil rub, preserved lemon tapenade, Moroccan pilaf.

Sea bass looks epic
Almost finished making salsa at lunchtime when I realised we had no limes or lemons. Cumeo pepper described as lemony so crushed a couple of tsp and chucked that in- really very nice. Not so much a substitute as different but would do again.
Gloucester old spot belly with a juniper n fennel n salt rub, roasted over a bed of apples , cider, calvados and all spice.
Turned into Piggy Burgers: balsamic shallots n B pork n sauce made from the roast apple and pan juices n crisp Serrano ham n salad
n vintage Sparkenhoe Red Leicester n Sauce Shop Buffalo chilli n garlic mayo n Creme fresh sauce.
Toasted Brioche bun.

Cooked using reverse sear method, damn!! It’s real juice and tender, all 873g of it.
Stonking looking dish, just the right amount of sauce for me.
Embarrassed to say it was the first time I’ve made a sauce from scratch. Only been cooking as a hobby for a year or two. So much better and got loads of meatballs and sauce left for a few more meals

I think I look odd because we’d just started eating and we stopped for a photo, I simultaneously wanted to kill the waitress and felt guilty about it.
