Two girls, one plate
Only just seen your post cd, there are variations throughout the ME however this is the recipe I tend to use.
3 potatoes, cubed.
1 onion.
2 minced cloves of garlic.
3 tbsp EVO
Garnish:
1/2 tbsp lemon juice.
Chopped coriander.
A spice mix comprising of:
1/2 tsp paprika
1/2 tsp chilli powder
1/4 tsp cumin
1/2 tsp Freshly ground black pepper
1/2 tsp salt
Par boil (but still firm) then fry in OO with the onions and garlic, when crisp add the spice mix and fry for a few mins to combine.
Hit with garnish and serve.
Polenta chips look epic

They were and quite a new thing here, the kids love them so they are here to stay, i like that you add whatever flavoured stocks and herbs you like, …and relatively healthy
