Rolled lamb breast, seasoned with salt & white pepper, sliced garlic inbetween t’ layers & dressed with sprigs of fresh rosemary.
Went in t’ oven at 6-10pm at approx gas mark 3.5. Coming out at 10-25 (4 hrs 15 mins cooktime) With the lid on the Le Crueset. >
Posh lamb sammidges with mint sauce for the next couple of days. Quite a nice size comparatively speaking. I rarely seem to nab 'em much over 550g, this 'un is 672g.

Some doc on a UK tv program said beetroot is excellent for lowering blood pressure so my good lady had talked me into eating one a day as she doesn’t want to cash in the policy just yet. Pickled it ain’t too bad. The pita was wholemeal as well
Beetroot is great, just not necessarily as a side to Chilli
I must confess it was a first for me also, not a disaster but maybe not something I’d repeat that often.
Added a nice bit of colour to the plate.
So where does this leave sweet chilli picked beetroot?..f’kin love the stuff!

Probably not, as I see it as more of a salad accompaniment, but I might try adding small cubes of it to a chilli in the making to see how that goes…? Similar texture to kidney beans might be ok ish?
That looks superb! I’m trying to be healthy and lose a bit of weight but that crispy lamb crackling would break my resolve.
