Okay so here’s what I had in the cupboard and fridge to bodge this together -

Spices -

  • mustard seeds
  • cumin seeds
  • coriander seeds
  • fenugreek seeds
  • tesco medium curry powder
  • ground turmeric
  • ground chilli powder
  • garam masala
  • salt & pepper

Ingredients

  • cauliflower
  • carrot
  • mushrooms
  • frozen peas
  • spinach
  • onion
  • garlic
  • tomato paste
  • 3/4 of an open tin of Mutti polpa tomatoes
  • garlic
  • basmati rice
  • rapeseed oil

Method (bit strong but a description of shoving what I had into a pan)

  1. Prep the veg and tip into boiling water for 10 mins and drain and set aside
  2. Whilst the veg are doing, splash oil in a pan, (I have a hybrid thing that looks like a wok but is thicker material and heats more progressively, like a rock-ceramic) on medium heat
  3. Throw in a tsp or two of mustard seeds and when those are sputtering added chopped onion, and then after a few minutes 3-4 cloves of minced garlic (don’t let this burn)
  4. Take the other seeds (1tbsp cumin, 1 tbsp coriander, 1/2 tsp fenugreek) and dry fry them in a small pan just until the fragrant smell is released and then grind in a pestle and mortar before adding the curry powder (about 2 tbsp) and turmeric (1/2 to 1 tsp) and chilli powder (1tsp)
  5. Tip spice mix into a bowl, add 1tbsp of oil and 2-3 tbsp of tomato paste and mix. You can grind in some pepper but I leave salt till last just in case there’s salt added to the powder or paste etc I’ve got to hand
  6. Add the paste to the pan and mix thoroughly, heat for a few mins until you can see the oil coming through, then slowly add water about 20ml or so and mixing it in with the paste. I do this by eye but reckon there was probably 100-150ml tops
  7. Heat this through until the oil comes through again and it starts to thicken a little (about 3-4 mins). I think I threw the mushrooms in at this stage.
  8. Add the tomatoes - polpa give a great consistency to the sauce but you can use any tomatoes, fresh chopped etc and also passata if that’s what you have to hand.
  9. Stir on medium heat and you’ll see it thicken slightly.
  10. Get your rice pan water boiling and wash the shit off the rice thoroughly, more the better.
  11. Add 2tsp of garam masala to the sauce and mix in and then add your veggies and lower the heat a little - cook this while you’re waiting for the rice to soften in c 10 mins. Add chopped or whole spinach towards the end for a few minutes.
  12. Taste and add salt and a little more garam masala if you like.
  13. Serve

Now normally I’d have my own curry paste pre-mixed from scratch (ie no Tesco curry powder involved); more veg like potatoes, sliced okra etc; tin of chick peas; lots of fresh coriander leaves to add to plated food and/or very finely sliced and added at the sauce stage once the tomatoes went in.

Air fryer jacket potatoes with butter and grated cheddar cheese served with sriracha mayo tuna and iceberg lettuce. Bloody lush.

How long do jackets take in the air fryer?

Was the first time I tried them.
The online recipes reckoned 50 mins at 200’ but I find the outside of food burns too quickly at that temp so I set mine at 165’. They were still a bit hard after an hour so I gave them another 25 mins and they were perfect - really crispy skin but soft inside,

Wife is back home tonight after two weeks away on business. So I made this apple tart , almond pastry,apple, cinnamon and a little vanilla. Will be with a scoop of vanilla ice-cream

One tomato plant we were given has ended up with quite a lot of green tomatoes.


So as well as some chutney, I am also seeing whether they can make a good curry base gravy.
