Love a good Mac n Cheese. In my chalet days, Iâd almost always do them as a kidâs meal when we had children staying - Youâd end up with so much leftover cheese from the cheeseboards of the previous week that it was frequently a 10-12 cheese version (being a little careful with which cheeses went in, the under 5s donât seem to be big fans of Epoisses). Would always go down a storm with the staff too.
If youâre making yourself, I highly recommend getting your hands on some sodium citrate, then your sauce only needs to be cheese + liquid (white wine and beer both work very well) + sodium citrate. No roux to dilute things. If youâre super keen, you can also infuse herbs and spices into the liquid before making the cheese sauce so you can impart the flavour without changing the consistency of the dish.

Riyaâs plain naan, bed of shredded red & tenderheart cabbage with shredded Romaine lettuce & quarter sliced & separated red onion, quarter sliced baby plum tomatoes & julienned cucumber.
Döner kebab meat & pickled whole cayenne peppers. Dressed with freshly made raita, freshly squeezed lemon juice & naga sriracha sauce.

Goats cheese & caramelised onion tarts in a butter enriched puff pastry, mit minted baby potatoes & steamed asparagus brushed with melted butter 'n cracked black pepper.
