I’ve got an old fashioned 57 cm Kettle. What does the fancy bit at the bottom do? Thinking of buying a new one. And is it tall enough to roast a Chicken upright, mine isn’t.

It’s an ash collector/vent thingy.

You must get fucking tall chooks in Shropshire mate, I could do a beer can chicken in my mid size B&Q kettle, which was smaller than 57cm

If it doesn’t have to be upright, they do a horizontal rotisserie adapter.

Never had any issues with mine. When not in use the Weber is covered and kept under shelter.

Have always found them tricky to smoke…

very very low heat, I put tin foil over the coals and wood to keep it damped down. It’s like shin or oxtail, very sinewy but melts really well and absorbs smoke below 40c

x2 not a big fan of lamb but neck fillet with cajun rub was knockout
