Are you talking about the same things, briquettes = coals and charcoal is the non compressed lumpwood stuff

Charcoal burns much hotter and quicker than briquettes, for low and slow briquettes is the only way, charcoal is good for quick high heat on steaks, prawns, chops and steaks etc.

I find briquettes burn too hot then go out.
Lumpwood or charcoal can be added to at will. Thus maintaining temperature and imparting complementary smoke. With the addition of wet wood chips it works out easier. Well, for me at least.

As with a lot of this stuff, it comes down to what works for you and your equipment.

I use the 2+2+2 method with a briquette snake and mesquite chunks.

Remove the membrane from the back of the ribs and apply rub (Bad Byrons butt rub is great) and leave for 15 mins

Put the ribs straight into the BBQ for 2 hours - temp should no higher than 130c (110c is best) - this is the stage where they are smoked - use 3x chunks of mesquite wood during this stage.

Take ribs out and spray with a mix of apple juice and apple cider vinegar and wrap in foil, make sure they are well wrapped and sealed closed. Put back in the BBQ for another 2 hours.

Take ribs out and remove the foil - be careful as they will fall apart very easily now.

Put them back in the BBQ for another hour and then after an hour cover with some BBQ sauce and then do the same again 30 mins before the end.

My mate at work has lent me this for the next couple of weeks while I am off work. I’ve had a brief flick through and there are some fantastic ideas in it. I have also ordered some mesquite chunks for the weekend. Not sure what to attempt first but I’m moist!
