Have been for one today. Really eating badly at the moment!

Dirty Bones, just behind Piccadilly. Was good. Not quite as good as Zephyr at the weekend, or Half Man/Half Burger, though. No smash burger…

No need for specialist restaurants either.
The best berders were cooked to order in Fish & Chip shops or Snack Bars as they are often called.

The place we were eating at grew from a van that used to be parked in a scabby ally behind a pub - They’ve done well. Owner Oz Harborth won National Burger Chef of the Year. Then Zephyr was a finalist in the UK’s top burger awards in 2023. Of course it’s not just the smash it’s what’s in the patty that counts a great deal too.

Date back to the 30’s-40’s in Canada and the US, when all the cooking in diners was done on flattops.
Many diners in both countries were/are owned by Greek emigres. In the 60s they began installing charcoal grilles in addition to the flattop and the public’s taste changed to char-broiled
Modern version aren’t yer grandparents smash berders, they’re from restaurants that specialize in the type and mostly use either a custom grind from a butcher partner or grind in house. Buns are better now too

I struggle with the word ‘broiled’. Water is implied along with something else but what? Where does the word come from, what does it mean and isn’t there already a perfectly good word for whatever it actually is? CUNTS!
