This place: https://www.theredlionwestdeeping.co.uk/ has the best food within at least 25 miles of where I live. It’s not cheap, but they source as locally as technically feasible, and the chef/co-owner is a habitual forager as well as a truly excellent cook.
We go a handful of times a year, and went last week, where I had a belly-pork and black-pudding pie, with the most perfect hybrid filo/flaky crust I’ve ever encountered. The fat from the BP is cooked separately and served as frangible wafers of exquisitely salty, fatty crackling. I’ve had different, and excellent, pies elsewhere, but this was outstanding!
With tips, three courses cost about £80 a head. But I’d rather do this every few months than weekly at somewhere barely average, which is Lincolnshire’s norm.
FWIW, the beer is superb, too.

At that time the poor ate pies made from the entrails of venison, which are called umbles - hence the expression 'to eat umble pie".
Yeah, picked that up as well. New to me, I’ll be quoting that one.
