I have to be a little sparing with how much interesting cheese I keep in the house, but this is my current poison. I cannot think of anything that improves quite as much as it warms up over an hour or two out of the fridge. It’s actually nasty at fridge temperature:

Received today from a Dutch neighbour. Homemade Ricotta. It’s alive! It’s alive! He wants the muslin back. Don’t know about the string.

Dunno. Still in shock really. We sent him off with a bag of quinces. Christmas early and surreal this year.

This is one of our faves. Our local Cheesemonger gets it in quarterly. I plan to head there on Friday for the current instalment….

Oh, and I’ll be changing my monicker in a couple of weeks.

Bethesda is a cheese hot spot. There is also Cosyn Cymru ewes’ milk cheese. On the A5, Tommy Telford fans.

Always a favourite, and have a round coming for Xmas…
