Firecracker brisket

Just done a 6 1/2 hr brisket and will have another hour tomorrow to make it sticky.
Plan is usual coleslaw in flatbread stuff. Problem is that I don’t like coleslaw (yes, really) and want something else.
Suggestions on a postcard please…

Jaysus, this isn’t going well. My aversion to beans of any fucking description results in the puking. I want to like them. I really should like them. But I can’t. (Childhood trauma involving nuns and being force-fed)

A Louisiana style coleslaw is very different from a shop style coleslaw.

Why ? I don’t like coleslaw either. So I leave it out.

Onions, maybe fried ? Spinach/watercress/rocket ? Tomato ? Pickles ?

When we were in Houston we had Po’ boys once in a while.

Rapini sautéed with tons of garlic and dried chilies is good if you’re looking to make a sandwich/wrap out of it
