Had lots of cheese, eggs and cream to use up so made some cheese and onion flans. I expected much overflow to occur but was pleasantly surprised.
Only intended to make the large one but I didn’t want to waste the pastry.

Like being back at school dinners, almost (I do think these are better but “cheese pie day” at school was one of the very few edible concoctions they served us)

I think flan is typically an open pie with savoury filling, whereas a quiche usually has an egg based filling with other savoury ingredients?
Haven’t had one for years but as I recall, a flan was more like a sponge base rather than one made of pastry.
Real men don’t eat flans!
But they enjoy a tart occasionally.
The filling had plenty of gravy in it so as soon as it was cut open it made a bid for freedom.
