When I tried using stones the knife got worse!
Really? That does surprise me, I’ve just sharpened two of the knives that Paul sent me (using very similar water stones) and they’re like razor blades.
For me the stones are NOT the issue.
yep - i even bought the angle guide as well. I use other stones for plane blades, chisels very successfully but these no for some reason
i do mine every week and keep them razor too. A bit like you and kneading dough paul, i find the whole process therapeutic

I obviously absorbed something watching my old man sharpen chisels and stuff through my childhood!
When I got the stones I also got a 15 deg knife guide.
Using it on the big knives gives you a really good feel for the required angle on the smaller ones which don’t fit the guide.

Been mulling upon a heavy bladed Gyuto for a while and have descided upon an 190mm Homura Aoko forged by Isuo Doi in the main because of his use of Yasugi steel.

I don’t have a clue tbh, last time we bought a set for £100 from John Lewis and they’re no good.

Global…don’t bother with the smaller 3/12 - 4 inch paring type knives
try them in the hand before you commit. I hated them, spent some money and gave 6 to my SiL
