Recommend me a sharpener that works well and is not too expensive.
My kitchen knives need a good dose of looking at.

And it wasn’t cheap anr rarely available
I think it was this or similar that Sodders got
I use whetstones but bought one of these for when I can’t be arsed

Just plumped for an Edge Pro Apex 4 sharpener
Was going down the TSPro route but supply issues scuppered that.
It just struck me this evening that this has been sitting at the back of a drawer for 15 years - my only foray into the American custom knife scene.
I knew Bob quite well. He said he’d like to make a knife for me. My only stipulations were that it needed to be UK street-legal and he should sign it.
For a man whose profession is/was quite rough I feel he’s always made elegant pieces.

Blade no longer than 3 inches and (I think) non locking. Also no flick knife type action.
I was at the Royal Armouries in Leeds a couple of weeks ago and was surprised to see, in the law enforcement section, that stuff like some Swiss Army knives and multi tools come under legislation.
Nothing more than 7.5 cms long for a blade.
Schrade 125OT Mustang. Owned this for around 30ish years. High carbon steel so it looks like shit, but very easy to sharpen. Schrade USA closed up shop in 2004 and the brand name was bought and production moved to China. I own a few knives, but this is my most used/loved. Lots of great outdoor memories attached to it
Right, I am strongly feeling the need to buy a really good slicer for things like slicing roasting joints etc. I’m doing a lot of it at work these days and my current chef’s knife isn’t all that great for it despite being decently sharp. Current front runners are:
Yaxell Mon (25.5cm blade)
Tohiro DP3 (27cm)
Misono Sujihiki (up to 36cm)
Anyone want to throw any other suggestions onto the pile that I can subsequently ignore?
Love the idea, but tbh I’m trying to cut slices about the same thickness as what the chainsaw would turn into shredded meat!

Not a bad shout. I’d probably go for the Victorinox equivalent as most of my working knives are by them and it therefore matches for the sake of my low level OCD
