Can anyone recommend a good sharpner for Wusthof classic knives?

Bought this wusthof one a while ago but it doesn’t get them all that sharp

You bastard I went to look at Global porn and came away with a Japanman Sashimi knife - I don’t even like fish. Bastard.

Whestones for me, takes a little getting used to for sure, but they work so well.

You can still use it to slice other things, nice joints of meat for example.

Did you get a dual or single bevelled one?

“this Bunmei 27cm Yanagi Sashimi Knife (1804/270) has a bevel on only one side of the blade, to help achieve even slices.” I have no idea what any of this means but I expect A&E or I’ll be looking for a refund.

I’ve not used a single bevel knife, but you’ll have to adjust what your used to as the wedge shape will naturally pull it sideways as you cut

So are there left-handed and right-handed knives? Hope he’s got the one that cuts away from the hand holding the meat!

I’m assuming given the knife geometry that it does pull towards the hand holding the meat, but your hand shouldn’t be below the starting height of the knife so not a big issue.

My YouTube algorithm fed me a knife sharpening video the other day, some annoying American guy who does it for a living, and he recommended some cheap diamond stones from Amazon, like these:

If you’re not happy with stones, I remember @Mrs_Maureen_OPinion bought an electric one a while back that he rated?

Yep - Chef’s Choice - it’s quick, convenient and consistent, but you can get a better edge if faff’s your thing, and they’re expensive… Nonetheless, if this one dies I’ll buy another in a heartbeat. Well - get it serviced, they’re also serviceable.
