Just watched the Ooni video again and they say that the oven should be around 350c before cooking commences, which is about the max I can achieve with mine.
Where do you have the pellet slide set?

OK I have just had a look and see what you mean I didnât realise that it was adjustable. It is almost vertical.

I have it set with the screw backed pretty much all the way out, try running it without the pellet lid on, make sure you poke the pellets often too as they get stuck. Other than that no idea, mine seems to settle at about 800f in the middle of the pizza stone.
I prefer diesel, gives more betterer flavour.
800 f? I am talking 350 c.
Ah OK. I did manage to get it up to just over 400c last night, but not for long. It is obviously a pellet management issue

I use a jam funnel on top of the hopper so it holds more pellets.
Basic routine is:
Pop pizza in
30-45 seconds turn pizza
30-45 seconds take pizza out
Poke pellets to push them down
Take pizza to table
Return with next pizza
By the time I get back with the next pizza the temp has recovered and the smoke has gone from the fresh fuel.
The smoker works with an auger and a fan, I feel the need to automate the ooni in a similar fashion.
I donât have a jam funnel to hand, but I will try the other tips and report back
ATM I feel like ordering the gas attachment
Would you say that operating it is trickier than fitting a cartridge or not?
I have a gas oven, it is a pain in the arris and doesnât get as hot as the Uuni (Itâs larger so this may have a bearing) and also doesnât have the flame / wood flavor. Gas bottles are heavy to lump about too. - In short gas may be a downgradeâŚ
