Use a docker, the bubbles can be a pain if they shift all the topping about

Not when they tangle with the hypocrisy topping, particularly when sharing and you get grenaded with the bubble slice.

Admittedly smaller bubbles are OK.If we’re talking bunionesque mounds that push off the toppings into a soggy central pool they can naff straight off.

Because of some dough issues, we ended up having to for pragmatic reasons. It’s different and actually ok - the bases end up very crispy. I still prefer hand stretched.
