When I’ve made this (Heston B recipe) it involved putting the unopened can of condensed milk in boiling water for a couple of hours before opening & then it was brown like proper caramel or one of ToC’s ceilings.

If the recipe told me to cook something that long I’d have fucked it off to the bin.

This was just sugar/butter and two cans of condensed milk, melt and dissolve everything then bring it to the boil and stir the fuck out of it.

It’s good.

Well, I made the balls, the sauce was just out of a bottle and was close enough. The veggies were veggies.

It’s a good article, some helpful tips and does make a great dal.

I cooked this last night. I don’t think I’ve come across methi + curry leaves/tamarind before. Worked well.

Did matar paneer on sat night- just paneer from the shops but I did this
