A tradition in ours is a nice steak on Xmas Eve. Claire went shopping for it this year, and apologised that all they had was thick cut sirloin. I’ll survive…

I love cooking thick steaks. Really hot iron pan on high, steaks in (they have been oiled and seasoned), turn them every 20s, done in 4-5 minutes. Rare and fucking amazing. Edamame into the pan to soak up the juices.
