I lost tolerance for meat fat (Beef and Pork especially) a few years back, can only have one peice otherwise I’ll be ill.
Shame as makes something like a Beef Rib or Pork Belly a bit of a waste when you can’t enjoy all of it!

Have you ever tried the Heston approach to crackling? It’s a bit faffy (of course), but as you start by scraping as much fat off the skin as possible, and then put it in a low over for about 5 hours to dry/render the remaining fat, it ends up pretty damned lean.

The party trick at the end is a few minutes in a blistering hot oven under a tray of boiling water, produces the most phenomenal puffing up and crack in the end result.

Half the pork gone already as the crackling needed another 15 mins but this is looking not too bad at all. Can still hear it cracking away in the kitchen.

Frenetic activity in the LCW this afternoon. A family member ordered a Series 102 for Christmas so having given the fruit a good soaking in single malt for a couple of months, it was time to get building:


Unit No. 102-106 is now undergoing Heat Treatment.

Unit No. 102-107 will be going to @Jim in the new year bake off.
