I’d be interested in the recipe for that, if you didn’t mind

Yep sure, lemme get some work out the way and I’ll jot it down for you.

Landlord of t’Pub invited us for lunch. It would have been rude not to…

‘Sausage’ stew.

Ingredients-

  • Shallots (halved or quartered)
  • Celery
  • Carrots
  • Garlic
  • Mushrooms
  • ‘Sausages’ of whatever kind you prefer
  • Paprika
  • Oregano
  • Cannellini beans
  • Tomato paste
  • Soy sauce
  • Half can of tomatoes or fresh chopped
  • Onion gravy (fresh or granules) - or if cooking much longer, vegetable stock and then some browning
  • Red wine
  • Olive oil

Method -

  • I use a cast iron enamelled pot but use what you have
  • Add oil and sauté the shallots, celery and carrots
  • Add chopped mushrooms
  • Add sliced sausages (I tend to brown these first either in the pan and set aside or in the airfryer)
  • Once the veg have caught a bit of colour and sausage and mushrooms done then I add 1tbsp paprika and a good pinch of oregano, salt and pepper and cook on for another 5 mins
  • Add red wine (I put about 100ml in) and deglaze the pan and reduce
  • Add the tomatoes and 1tbsp tomato paste, and a splash of soy sauce
  • Now here’s your choice based on time. If I have several hours I might use a veg stock and lower the heat and simmer for longer, reducing slowly, and use gravy browning to get the rich colour
  • Otherwise as above I make a mix of thin onion gravy, and add that instead, and cook for a further 20-30 mins
  • Add the beans before the simmer.
  • Optional (add a little butter before serving to get a silkier glossy sauce)

Beef isn’t my usual choice of meat in a curry.

Based on how this one has turned out, it will feature more frequently.

Chicken legs, pancetta, butterbeans, cherry tomatoes, red onion and red wine. First time I’ve made it but won’t be the last. Didn’t even need the side portion of air fryer chips I omitted from the picture.

Looks great.

It’s been difficult finding butter beans in the shops round here since whispers of prepping has filtered through to the local nitwits.
