cant remember what thread it was in, but here is the belgian stew recipe, it is quite adaptable ( as all stew but the beer to meat ratio must be equal )

Belgian beef stew
1kg of chunky beef chopped
1 litre of Belgian brown beer minimum 7.5%
50g butter
2 thick slices of stale bread
Large tbl spoon of mustard
Fresh Parsley
Fresh thyme
2 bay leaves
6 onions chopped thin half moon
2 tbl spoon of plain flour
2 tbl spoon of brown sugar
Salt and pepper for seasoning
2 tbl spoon of vinegar not malt (ie cider or red/white wine)

Method

  1. Melt butter in large pan and add beef till browned
  2. Remove beef with slotted spoon leaving juices in pan
  3. Add onions and brown then add sugar( just sprinkle to cover onions ie save some for next stage) until caramelised add beer bring to boil continuously stirring
  4. Return the meat to the pan adding parsley, bay leaves and thyme and the rest of sugar and season. Put lid on pan.
  5. Let it simmer on low heat for 45mins
  6. Spread the mustard on the two slices of stale bread and place bread on top of beef/stew
  7. Cook for another 1.5 hours on low heat ( you can add flour if you need the sauce to be thicker, I never do )

Lunch.
I had a little veal mince to use up so I made up patties with spicy Italian sausage and Italian herb mix, gruyere cheese and topped with an egg. Served up with hot n sweet gherkins, black garlic mayo , salad and a handful of fries.

Some smoked fish, the smoked halibut was particularly good, herrings in onion, sardine and preserved lemon. Greek salad addressed with Santorini beach dried oregano, Russian salad with horseradish dressing
