6-hr pork shoulder (with apple and herbs) alongside the same Greek style roast potatoes in Chicken stock. Crackling finished off in Air fryer.
So neat and tidy and picturesque. My BBQ tables look like a hurricane hit it with meat and grease and charcoal stains everywhere, after my rabid animal boys descend.
Just moved to a new gaff and decided it was time to replace my 10 year old big green egg with something a little more maneuverable and practical. So I now have a Monolith Jr Pro Kamado style bbq -

New Meater wireless probe being used for first time
I gave up on my Meater Probe, only seemed to connect when stood outside within view of the BBQ so really defeated the point for me. My CharBroil is double skin steel so maybe acting as a bit of a farady cage or summt?
Looking forward to next Wed!
Mine seems to work securely to 100ft away then drops out.
BBQ is 10ft from patio doors and my PC is only 30ft further.

Lamb shoulder…
5.5 hours indirect in the Weber. 4.5 @ 140, then chucked in some more coal for the last hour.
Marinated overnight in garlic, rosemary, olive oil, honey, and red wine vinegar (vac packed).
Rested for only 45 minutes as the veg was ready…
