Did not reply to this, was in for 8hrs in the end, was perfect although I cut the fat off and finished in the air-fryer which worked out really well.

One for Wednesday, cheeky mid-week bbq with a couple of offcuts of fillet for the baby, she loved it!

Prep for tomorrow’s party, shoulder of Lamb (Greek herb/Spice mix with fresh Rosemary and Basil Mint) and Pork (stuffed with Sage and Bay Leaf) going in at 6AM to be ready around 3PM.

In all the excitement of the party yesterday I did not get a photo of the finished meat, was a success and not much left over. Tonight’s leftover is lamb with the homemade Alioli and Tzatziki with Greek potato salad!

Those ribs look nice n meaty.

At the end of Lopwell there was a big vac packed slab of flat iron left in the fridge. No takers so it came home & went in the freezer.
It came out on Friday & was cooked last night, actually two pieces.

Lightly seasoned & oiled

Served up with some roasted veg, fries, slaw and a Bourdelaise sauce.

and a nice Amarone
