With tea it’s a series of short steeps under pressure then a release. You’re supposed to be able to vary the pressure of the valve in the portafilter but I haven’t worked out how to do it yet. It’s a bit high, I’d like it to be around 4 bar.
Please stop posting graphs. It’s causing the want and I don’t even like espresso.
If you had one you could make other people nice espresso.
