I think I can refine the grind a tiny bit but can confirm it’s a nice coffee. I could taste the floral/ lavender note and when it really cooled it was definitely lemony. In between, I’d say it has the classic tea-like, Ethiopian thing but I’m not sure I got the raspberry.
Yeah I got hints of the floral and maybe very faintly lemon. I’ll experiment more with the variables and temps. Speaking of temp, it looked to be light-medium roast, so I did close to 100C. Is that right?
Out of interest did you make a pour over or espresso?
By the way I’ve really improved my morning coffee by moving to the Hoffman technique from 4:6.
25g coffee, 400ml water. 50ml bloom for 45s, to 240ml for pour 1, to 400ml for pour 2, each pour about 30s. Swirl after bloom, stir slightly after second pour.
This brings out the sweetness and acidity much better. Needs a much finer grind.
I’ve gone the other way. Preferred the 4:6 to Hoffman.

The other thing that I’m paying much more attention to is temperature - drinking temperature, that is.
I’ve started to aim for creating great coffee at the optimal temperature, which is often really low - scarcely above body temperature, I think.
The coffee I’m currently drinking is a new bag, second day (Square Mile Sub). I was initially thinking that I’d totally fucked it up, as the first five minutes were vile and over extracted. Now it’s cooler it’s bloody fantastic, bursting with sweetness and zing.
I do sip as it cools to check I’m not missing some sudden marvel of chemistry, but don’t pay much attention to that. 95% of my enjoyment comes when it’s below 50 degrees, I think.
I finally made it to Origin’s shop and got their filter coffee (can’t remember the name but it’s not one currently on their website).
I’ve mentioned my concern about not knowing what ‘good’ tastes like with pour over, so as to know how good my brews are. I was a bit nervous that theirs would taste much better and I’d have to go do some courses or something. I was relieved to find that theirs tasted very similar to mine, and in fact I’d say I actually prefer some of mine when I do the sweeter setting pours (4:6 method). So yes, good to have the reassurance I’m on the right track!

It was a 10g pour so not too bad.
Indicative of the costs of running a place with trained staff that is hygienic & safe rather than the cost of the actual ingredients. I bet the margins are good but not great. Too much competition for that.

Yeah, Hoffman did a detailed breakdown of the price of a takeaway coffee in one of his early vids. Not pretty and it would make you balk at setting up as any small high street business.

I’m in Italy, home of the espresso.
So far I haven’t had a decent coffee, in fact they have been mostly terrible.
Although the terms seem attractive, £1500 is expensive for a single boiler/vibration pump machine.
They don’t call it HP for nothing although all service and maintenance is included.
I only skim read it, but don’t you pay incrementally more than 1500 if you go monthly?
