No welder, or grinder. Sewing and pressing it isn’t really happening!

On my last visit to Tokyo I saw this store but didn’t have time to stop. Won’t make that mistake again in January. Need a good knife

That was my first reaction but wouldn’t welding it somewhat compromise the heat treatment it would’ve had in manufacture?

I like work horse knives, ones that will keep an edge for a long time and are easy to sharpen. Chef friend of mine recently recommended:

Talk about sharp… nice in the hand and easyish on the wallet. I wouldnt spend big money on a knife without trying it in my hand first again.
