Knives and Sharpening

I’ll need to sort some means of sharpening. I have one of the Chantry fixed angle sharpeners but never thought it did a good job.

I’ll have around £150 for knife, any sharpening kit can come next pay day.

Do you have a strong preference on Japanese vs Western style knife handles?

Beyond aesthetics, no. I like the simple looks of Japanese handles.

I’ve got the 10" chefs knife, sharpener and magnetic block, all excellent quality.

The knife is fantastic, really nice handle and great balance.

There are plenty of knives which have a Damascus ‘look’ but aren’t really Damascus - buyer beware

If I were you, I’d nae bother: just get the best steel you can afford. Look for VG10 steel

Given you won’t be going near bone, you could almost certainly suffice with one good Chef / Gyuto. I prefer a longer blade than 8" as it’s more versatile for carving, large fish etc, but it’s a personal choice as to how big a weapon your hands can hold

I’ve got a regular Shapton 1000 for if something bad has happened, and a Shapton Glass 3000 for routine maintenance. No need for a honing rod generally with those options.

Oh, Shapton is very spendy for a stone. I probably should buy
