Pizza faff with hypocrisy topping

Any good sauce suggestions?
Just did a batch 9f the Ooni recipe, its a bit meh.

Lots of fresh San Marzano tomatoes, peeled and squished.
Bit of salt, bit of basil, bit of garlic.

Thats essentially the Ooni recipe.
Unfortunately Mrs P cant have any seed in her diet so the tomatoes were replaced witha shop bought passata. I suspect that is the source of meh.

Passata is fail
It’s sour and not fit for purpose. You need a sweet and more delicate sauce.
If you could dip bread in it raw and be happy, it’s ok for pizza.
We use the Mutti tins and buy in bulk to get the cost down. With only two or three ingredients, each one matters.

Removing the seed by sieving would be a possibility.

I use the Mutti pizza sauce as well. Saves a lot of faff and time.

First attempt, used Mutti sauce. The cheese was wet, overly wet and i burnt the crust but it was very tasty.

Any suggestions for mozzarella that isnt wetter than sodders Tenna?

I drain the mozzarella and pat it down to remove excess moisture.

Looks a much better first effort than mine! (Straight to bin :rofl:)

Mozzarella is shit. Bland, rubbery and tasteless.

If you want a dry, stringy cheese with plenty of flavour, try provalone or gruyere.

I gave up with the wet mozzarella. I grasped the nettle and went ‘grated mozzarella for pizzas’ from Sainsbury’s. Works a treat, no more sogginess, took me three years to work that one out!

Ive some in the fridge which ill be using next but i suspect it wont taste the same.

Have you tried the blocks as they tend to have less moisture

Just came across that while googling, will give it a go.
