Pork Faff Therapy/ What are you eating?

I’ve just dug the wrapping out of the bin, the asparagus was produced in Mexico! How it gets here so fresh beats me and it has been in my fridge for over a week.

I believe Iceland grows a good deal of stuff under glass, geothermally heated. That included pineapples back in the 90’s when we were there. They were still expensive, because everything was. They imported a large fraction of their food (not fish, obvs).

Parmesan chicken, croquettes and salad

The croquettes look overdone, but they’re not, they go that colour in 30 seconds once lowered into the oil. Must be the mix of breadcrumbs and gram flour I use and maybe the type of oil, dunno.
