Yup … Fabulous pans , wrought iron rather than cast ergo much lighter and cook just as well as cast , takes a little effort to build up a deep patina but once you have fried eggs just whoosh off the pan …

This makes me wish that there was a service that allowed you to try out a load of different manufacturer’s pans, with relevant ones being properly seasoned etc. it always feels like such a punt, because you have to use them way beyond what would be allowed by distance selling, and these are often purchases for life.

SOLIDteknics also manufacture a fantastic range of Stainless pans called nöni, made out of nickel free steel billets milled into sheets and the pans formed over a press dye so no separate riveted on handles

I fancy the 17cm frying pan.

Its a little cracker … Couple of fried eggs to a nice single Tournedos Rossini finished in the oven

Ah, I think flax is the one I’ve heard some criticism of. It does the initial season wonderfully, but tends not to hold up long term compared to other oils.

I wonder if that’s because it has a lower smoke point than the others. I’m sceptical, too. I used grape seed and rape seed oils.

It is gettting rapeseed seasoning.
That is what I have got!

I’d do a couple of rounds of oven seasoning, then do the stovetop.

I assume it is cold pressed by hand, triple filtered and comes from seed grown on an Eastern slope?

Wipe it with oil; put in oven; cook at max. temp for an hr or so; let cool.
