How about coconut oil? This has a high smoke point.

sadly hard to find in the UK, and it doesnt look like Mauviel will ship to the UK directly from their website…

Unsurprisingly, not such an issue to get over here. Think the only bricks and mortar shop stocking them in Bordeaux is still trade only mind.

Edit: Ah no, one of the two cook shops in the centre has them.

actually their customer service people have emailed me back saying they can but need to do a “special” quotation.

You will get a nice high temp sear on a steak …yet still med rare with that pan :+1:

I was loving the almost dark bronze colour the pan went after seasoning. Bit shocked when it changed back to metal looking when I cooked and it started looking more like the one you posted
But it didn’t stick
Have washed in hot water only and reseasoned.
