Pots and pans

It looks good and will be strong but I am certain that at some point I would burn myself by grabbing a hot handle. Probably only do it once though.

Does steel not behave like cast-iron in this respect then? I have a cast-iron griddle pan on which the handle gets very hot when cooking steak, for example.

My cast iron pan has a steel handle that’s perforated at the base. Works really well to stop the handle getting hot, even if the pans heated for a long time. I wonder if the cut outs might achieve the same effect.

I have a stainless steel pan where the handle doesn’t get hot, though it’s not one piece. I’m assuming those holes are to keep it cooler than the pan.

My skillet has a hole in the handle, but it still gets hot.

I’m assuming it’s different being iron then but I don’t know to be honest. Would be useless to me if it got hot, I’d forget constantly haha.

We’ve been using Bourgeat copper pans with stainless liners since 1989 (wedding presents) and they are great to use although the cast iron handles do get hot. The copper discolours but will clean up well with lemon juice or a suitable polish until they look as good as new.

They are literally lasting a (ie: our) lifetime, but when I looked them up the prices are correspondingly eye-watering now … don’t see us buying any more :joy:

yes they are great, we’ve got a 26" stainless saute pan given to us by a chef friend about 10 years ago…Will last a lifetime.

Incoming…First impressions…nicely finished with a smooth polished cooking surface…balances well in the hand,…solid 3mm steel adequate at 1.5kg

Is it just the perspective or is the handle massive?

They do manufacture them with an adequate handlet…keeps paws a nice distance from the hot bitshowever there is perspective at work in that shot
