These were really fucking tasty, and 2 of 3 kids loved them as well which puts them in quite an exclusive club!
Had courgettes to be used so had them with thogiyal. Soaked everything overnight, blended first thing and rested the batter for 4 hours.

Tried making paneer using vinegar. Weirdly I seemed to get a lot less than using lemon juice even though I’m pretty sure it was fully curdled…

This was fucking incredible tonight.
No measurements in that recipe…I gently fried 10 bori on a low heat in 1 tbsp mustard oil. Removed then 2 tbsp mustard oil, 1 tsp panch phoron (using wild celery seeds instead of mustard seeds) and 3 slit green finger chillies. Half a large onion chopped finely, then 2 courgettes chopped, 1/2tsp turmeric, 3/4tsp salt and 1/2tsp jaggery. Cooked covered for 8 mins then 1 chopped tomato, tbsp chopped ginger and the bori. Covered and cooked for 8 more mins.
