This, but with potatoes as well as peas, swapped out 1tsp of the salt for a tbsp of fish sauce, added a star anise and some stone flower with the whole spices at the beginning, marinaded the mince for a few hours in the yoghurt with turmeric and chilli powder (and the salt/fish sauce) and added some stone flower to the Garam Masala at the end.

Fuucking beautiful.

A tsp of ghee in the rice when steaming in the instant pot makes it fucking wonderful :stuck_out_tongue:

Also did these and they worked brilliantly. I added a few seconds on direct flame both sides at the end.

Nope. Mainly veggie food though, you’re right- I’d sooner give up meat than legumes :stuck_out_tongue: Eat a fair bit of fish. Just rarely eat meat.

Too much meat, not enough veg. I do eat a lot of seafood tho’

Vegetables are best deep fried :joy:

I’m trying the Felicity Cloake recipe that you posted.

I don’t have a blowtorch, so I’ll just make the in a very hot frying pan

The Keralan chicken curry was lovely (pretty hot too!) and that naan recipe is a winner.

Undoubtedly the best naans I’ve made.

The chickpea recipe is a new one on me @NAM posted it . Well worth searching out the amla. I got chilli’s wrong for the chickpeas as I was following their recipe and the chicken. I knew I needed 5 green chilli’s in total, 2 for the chicken and 3 for the chickpeas…but the 5 ended up in the chickpeas…they were delicious though…

you dont often go wrong with a felicity cloake recipe, if its something new to make I always try and see if she has a take on it

oh and by the way that simple recipe for batter and its timing was perfect, used a camden town off menu ipa for the beer, Mrs SMAB normally does not eat the batter, today she ate pretty much the lot.
It was fantastic with the polenta chips. ill post a few piccies once i have a mo

Mackerel season will be in full flow here in a couple of weeks. I can get as much as I want. I’ll have to see if I can get hold of some coconut oil.

Next on my list to try are bhatura, which as far as I can tell are basically deep fried naan bread…it seems to essentially be the same dough, possibly with addition of semolina for crispiness.

Deep fried fucking naan, can you fucking imagine?
